Christmas Cookies

BOURBON BALLS

 

2 c fine vanilla wafer crumbs

1 c conf. sugar

1 c chopped walnuts

1/4 c Hershey cocoa

3 Tbsp. dark corn syrup

6 Tbsp. Bourbon Whiskey

Dash of salt

Combine all ing.  Roll into balls.  Roll in additional conf. sugar.  Store covered several days.

 

CHOCOLATE CHIP COOKIES

 

375 degree oven   10-12 minutes

Combine and set aside:

2 1/4 c flour

1 tsp. baking soda

1 tsp. salt

Mix together:

1 c margarine

3/4 c sugar

3/4 c brown sugar

1 tsp. vanilla

1/2 tsp. water

Beat in:

2 eggs

Mix in flour mixture.

Stir in:

1 12 oz. bag chocolate chips


 

7 LAYER COOKIES

 

350 degree oven  9x13 pan  30 minutes

Melt in pan:

1/2 c margarine

Layer in the following order:

1 c graham cracker crumbs

1 12 oz. bag chocolate chips

1 c chopped walnuts

1 bag butterscotch chips

2 c coconut

Drizzle over top:

1 can Eagle Brand sweetened condensed milk

 

PEANUT BUTTER PRESS

 

375 degree oven      10-12 minutes

Blend:

1/2 c margarine

1/2 c sugar

1/2 c brown sugar

Beat in:

1 egg

1 Tbsp. hot water

1/2 c peanut butter

Add:

1 1/2 c flour

1/2 tsp. baking soda


 

COCONUT DROP COOKIES

 

400 degree oven    8-10 minutes

Cream together:

3/4 c margarine

1 1/4 c sugar

2 eggs

1 tsp. vanilla

Stir in:

3 c flour

salt

3 tsp. baking powder

Add:

2/3 c milk

Stir in:

1 1/2 c coconut

 

RUSSIAN TEA BALLS

 

400 degree oven     10-12 minutes

Mix together:

1 c margarine

1/2 c conf. sugar

1 tsp. vanilla

Stir in:

2 1/2 c flour

1/2 tsp. salt

3/4 c finely chopped walnuts

Squeeze into a ball.  Roll into small balls. Bake.  Roll in confectioners sugar while still hot.


 

PEANUT BUTTER CHIP CHOCOLATE COOKIES

 

350 degree oven      8-10 minutes

Cream together:

1 c margarine

1 1/2 c sugar

2 eggs

2 tsp. vanilla

Combine & add:

2 c flour

2/3 c Hershey cocoa

3/4 tsp. baking soda

1/2 tsp. salt

Add:

1 bag peanut butter chips

 

PRESS BUTTER COOKIES

 

350 degree oven      10 minutes

Cream together:

1 c butter

3/4 c sugar

1 egg

1 tsp. vanilla

Add:

2 1/4 c flour

1/4 tsp. salt

1/2 tsp. baking powder


 

GLAZED APPLESAUCE PRESS COOKIES

 

350 degree oven   8-10 minutes

Cream together:

1/2 c margarine

1/2 c brown sugar

1/2 c sugar

Add:

1 egg

1 c applesauce

1/2 c wheat germ

Add:

3 1/2 c flour

1 tsp. baking soda

1/2 tsp. salt

1 tsp. cinnamon

1 tsp. nutmeg

1/2 tsp. cloves

Glaze:

Confectioners sugar

water

Bake - glaze - decorate.

Dough will be sticky.


 

OATMEAL RAISIN

 

375 degree oven      8-9 minutes

Cream together:

1 1/4 c margarine

3/4 c brown sugar

1/2 cup sugar

Add:

1 egg

1 tsp. vanilla

Mix in:

1 1/2 c flour

1 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

1/4 tsp. nutmeg

Stir in:

3 c quick oats

1 c raisins or dried cranberries


 

RICE KRISPIE SQUARES

 

Stovetop or Microwave

Melt:

1/4 c margarine

Stir in til melted:

1 10 oz. pkg. marshmallows

Stir in:

6-7 cups rice krispies

1 12 pkg. peanut butter chips (optional)

Spread in 9x13 pan sprayed with pam. Butter your hand first to spread easily.

Cool to room temperature and cut into squares.
